Pan Seared Salmon

INGREDIENTS:

2 salmon filets 4-6 ounces each
1 tablespoon olive oil
3 tablespoons butter
1 1/2 teaspoons minced garlic
2 teaspoons lemon juice
salt and pepper to taste
1 tablespoon chopped parsley

INSTRUCTIONS:

  1. Season the salmon filets with salt and pepper to taste.
  2. Heat the olive oil in a large skillet over medium high heat.
  3. Once the pan is hot, place the salmon filets in the pan skin side up. Cook until it has a golden brown crust.
  4. Carefully flip the salmon and cook until the fish is opaque and easily flakes.
  5. Remove the salmon from the pan. Add the butter to the pan and melt.
  6. Add the garlic to the pan and sauté constantly. Stir in the lemon juice and salt and pepper to taste.
  7. Place the salmon back in the pan. Spoon the sauce over the top and coat the salmon.
  8. Sprinkle the parsley over the salmon, then serve and enjoy!
