Grilled Eggplant with Garlic & Herbs

INGREDIENTS

  • 2 large eggplants
  • 4 Tbsp extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp chopped fresh basil
  • 1 Tbsp balsamic vinegar

INSTRUCTIONS

  1. Preheat your grill to medium-high heat.
  2. Slice the eggplants into 1/2-inch thick rounds.
  3. In a small bowl, mix the olive oil, minced garlic, salt, pepper, parsley, and basil.
  4. Brush both sides of the eggplant slices with the garlic herb oil mixture.
  5. Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
  6. Remove from the grill and drizzle with balsamic vinegar.
  7. Serve hot, garnished with additional fresh herbs if desired.
