INGREDIENTS
- 2 large eggplants
- 4 Tbsp extra-virgin olive oil
- 3 cloves garlic, minced
- 1 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 2 Tbsp chopped fresh parsley
- 1 Tbsp chopped fresh basil
- 1 Tbsp balsamic vinegar
INSTRUCTIONS
- Preheat your grill to medium-high heat.
- Slice the eggplants into 1/2-inch thick rounds.
- In a small bowl, mix the olive oil, minced garlic, salt, pepper, parsley, and basil.
- Brush both sides of the eggplant slices with the garlic herb oil mixture.
- Place the eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
- Remove from the grill and drizzle with balsamic vinegar.
- Serve hot, garnished with additional fresh herbs if desired.
