Fresh Fruit Spring Rolls

Yields 6
  1. 6 rice papers
  2. 1/2 mango
  3. 1/4 melon
  4. 1 apple
  5. 12 raspberries
  6. juice of 1/2 lime
  7. fresh mint leaves
  8. Swerve sugar- no gi
  1. Cut the mango and the melon and peel it. Peel the apple. Cut the fruit in julienne and sprinkle with lime juice.
  2. Soak the rice paper for half minute, then drain and put on flat surface. Fill with fruits and a few mint leaves. Wrap the rice paper (see the pictures below).
  3. Grind the sugar wit a few mint leaves in the mortar.
  4. Serve the fresh spring rolls cut in half with some mint sugar.
