Dairy-Free Peppermint Hot Cocoa
- 1 ½ cups coconut cream
- 1 ½ cups coconut milk
- ⅛ tsp salt
- 6 ounces of enjoy life bittersweet chocolate chips
- Optional Dandies Vegan Mini-Marshmallows
- In a saucepan, combine the cream, milk, sugar, and salt and heat over medium-low heat. When the cream mixture just begins to steam, add the chopped chocolate, and stir, until melted. Stir in the peppermint oil. Divide the hot chocolate among mugs and top with whipped cream and chocolate shavings.
In a small saucepan combine cream milk and salt over medium heat. After about 3-5 minutes the mixture should begin to steam. Turn heat to low and add enjoy life bittersweet chocolate chips and chopped up peppermints.
